Yes, I like them <em>raw<\/em>, and not salted or roasted. <\/p>\n\n\n\n<p>I&#8217;ve been happily buying <a href=\"https:\/\/www.amazon.com\/Fisher-Unsalted-Preservatives-Naturally-Nuts\/dp\/B01N49HPHK\" target=\"_blank\" rel=\"noreferrer noopener\">Fisher brand pecan halves from Amazon<\/a> for a number of years now, but I decided to give <a href=\"https:\/\/www.costco.com\/kirkland-signature-pecan-halves%2C-2-lbs.product.100115257.html\" target=\"_blank\" rel=\"noreferrer noopener\">Costco&#8217;s store-brand Kirkland pecans<\/a> a try. Gotta put that <a href=\"https:\/\/abcnews.go.com\/GMA\/Food\/costco-increases-membership-fees-tier-cost\/story?id=111841618\" target=\"_blank\" rel=\"noreferrer noopener\">$65 Costco membership fee<\/a> to work! They are stiffer, and have a slight bitterness from the shell dust. Alas. <\/p>\n\n\n\n<p>Compared to other brands of pecan halves, Costco&#8217;s were overall smaller and much less &#8220;plump.&#8221; Less meaty. Straight from the bag, they lack the buttery flavor to which I am accustomed. <\/p>\n\n\n\n<p>There were also a lot of shriveled, flat, and dark pecans in my package. And some that start out juicy on one end, and end up twisted and emaciated on the other end. And those dismal, woebegone pecans that are just sort of &#8220;weightless,&#8221; like they dried out, and there&#8217;s nothing left inside. I&#8217;ve only returned one item to Costco so far, but I seriously contemplated returning these pecans for a refund. I was THAT unhappy.<\/p>\n\n\n\n<p>What I eventually realized is that these pecans are MUCH better for <em>baking<\/em> than for <em>snacking<\/em>. They are VERY crisp, and stay wonderfully crunchy after mixing with other ingredients. Super-crunchy nuts. Toasty-toastless nuts.<\/p>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">What did I make with my pecans?<\/h2>\n\n\n\n<p>Gosh, what DIDN&#8217;T I make? I used my pecans in a Cranberry-Dill Chicken Salad \u2014 made with Costco Rotisserie Chicken and served on Costco Croissants (I swear Costco isn&#8217;t paying me!). <\/p>\n\n\n\n<p>I was impressed that the nuts stayed crunchy, even after refrigerating for days in the liquid mush of the chicken salad. You can <a href=\"https:\/\/sugarspunrun.com\/butter-pecan-cake\/?fbclid=IwZXh0bgNhZW0CMTAAAR1gow7ReFbGWVJPt-ZYz1e6isLl6QjQpGECyvVuZFPCstqHAjRZbAinxVI_aem_Z_HbkhkH-8G455xRbY_BVA#recipe\" target=\"_blank\" rel=\"noreferrer noopener\">find the recipe from Sugar Spun Run here<\/a>). <\/p>\n\n\n\n<p>This recipe requires the pecans to be chopped very finely, which was a bit of a chore with Costco&#8217;s stiff, obstinate nuts \u2014 I needed a super sharp knife and a bucket of patience. Next time I will use my food processor! You need almost two cups of pecans for this cake. Yikes.<\/p>\n\n\n\n<p>But seriously, I will be making this cake again. And again. And agaaaaaaain. Pecans were first <a href=\"https:\/\/en.wikipedia.org\/wiki\/Pecan\" target=\"_blank\" rel=\"noreferrer noopener\">grown commercially in the US in the 1880&#8217;s<\/a>, and <a href=\"https:\/\/baganut.com\/the-history-of-pecans-in-america\/\" target=\"_blank\" rel=\"noreferrer noopener\">commercial processing didn&#8217;t start until the 1920&#8217;s.<\/a> Unsurprisingly, <a href=\"https:\/\/www.ers.usda.gov\/data-products\/chart-gallery\/gallery\/chart-detail\/?chartId=78661#:~:text=The%20United%20States%20is%20the,33%20percent%20of%20U.S.%20production.\" target=\"_blank\" rel=\"noreferrer noopener\">Georgia is the top-producing pecan state.<\/a> The pecan tree is the <a href=\"http:\/\/chrome-extension:\/\/efaidnbmnnnibpcajpcglclefindmkaj\/https:\/\/txmn.org\/elcamino\/files\/2010\/03\/Native-Pecan-Tree.pdf\" target=\"_blank\" rel=\"noreferrer noopener\">state tree of Texas<\/a>, and the only <a href=\"https:\/\/www.caneriverpecan.com\/pecan-history#:~:text=The%20history%20of%20pecans%20can,valuable%20North%20American%20nut%20species.\" target=\"_blank\" rel=\"noreferrer noopener\">major nut tree to grow natively in North America<\/a>. Yay. I&#8217;ll add that the <a href=\"https:\/\/www.agmrc.org\/commodities-products\/nuts\/pecans\" target=\"_blank\" rel=\"noreferrer noopener\">United States is the world&#8217;s top producer of pecans<\/a>, so there was already a good chance these were domestic nuts.<\/p>\n\n\n\n<p>The bag doesn&#8217;t explicitly say these nuts are &#8220;raw.&#8221; But, ya know. Pretty sure they are.
