It looked and sounded amazing. I\u2019ve <em>generally<\/em> been a fan of <em>most<\/em> Costco Bakery items I\u2019ve tried so far, so it seemed like a sure thing. Unfortunately, this cornbread was a disappointment and <em>not<\/em> something I\u2019d purchase again.<\/p>\n\n\n\n<p>There are five big issues, which I\u2019ll address individually.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\" id=\"yui_3_17_2_1_1718049697451_86\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"837\" src=\"https:\/\/snarklesauce.com\/blog\/wp-content\/uploads\/2024\/06\/Costco-Kirkland-Bakery_Green-Chile-Cornbread_slice-angle-1024x837.jpg\" alt=\"A slice of Costco's Kirkland bakery green chile cornbread, sitting on a white plate over a wooden table.\" class=\"wp-image-1280\" srcset=\"https:\/\/snarklesauce.com\/blog\/wp-content\/uploads\/2024\/06\/Costco-Kirkland-Bakery_Green-Chile-Cornbread_slice-angle-1024x837.jpg 1024w, https:\/\/snarklesauce.com\/blog\/wp-content\/uploads\/2024\/06\/Costco-Kirkland-Bakery_Green-Chile-Cornbread_slice-angle-300x245.jpg 300w, https:\/\/snarklesauce.com\/blog\/wp-content\/uploads\/2024\/06\/Costco-Kirkland-Bakery_Green-Chile-Cornbread_slice-angle-768x628.jpg 768w, https:\/\/snarklesauce.com\/blog\/wp-content\/uploads\/2024\/06\/Costco-Kirkland-Bakery_Green-Chile-Cornbread_slice-angle.jpg 1094w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/figure>\n\n\n\n<h3 class=\"wp-block-heading\">Problem #1: There is too much sugar<\/h3>\n\n\n\n<p>Sugar is the first ingredient, so this is VERY sweet <a href=\"https:\/\/en.wikipedia.org\/wiki\/Cornbread#:~:text=Cornbread%20is%20a%20quick%20bread,the%20Hopi%20people%20in%20Arizona.\" target=\"_blank\" rel=\"noreferrer noopener\">cornbread<\/a>. It\u2019s as sugary as <em>cake<\/em>, but the texture and green chiles aren\u2019t really compatible with that level of sweetness. There are certain circumstances under which a cake-like cornbread is suitable, but this isn\u2019t one of them. Unfortunately, the texture in THIS cornbread is a bit overboard. There is a lot of <em>very<\/em> coarse, dry, rough corn grit mixed into the batter and stuck to the top. It ends up tasting half raw and half cooked. I found it a particularly strange combination, because the bread is otherwise moist and soft. Using a more finely-ground cornmeal would be my preference. I bought it primarily for the peppers, so I was particularly disappointed when I couldn\u2019t actually <em>taste <\/em>any peppers<em>.<\/em> Roasted <a href=\"https:\/\/www.allrecipes.com\/viral-jalapeno-pepper-picking-tip-7574268\" target=\"_blank\" rel=\"noreferrer noopener\">jalapeno<\/a> and <a href=\"https:\/\/www.thespruceeats.com\/what-are-poblano-peppers-995741\" target=\"_blank\" rel=\"noreferrer noopener\">poblano<\/a> peppers are really the only \u201cflavoring\u201d in the bread, besides corn and sugar, so this is pretty sad. The only way I can get a tiny glimmer of pepper taste is to pick apart the bread where a little glob of green stuff is and pop just that nugget in my mouth. Otherwise, nothing. Yellow makes me happy. But not in this instance. The top of the loaf is dusted with a mound of loose, powdery, vivid yellow cornmeal \u2014 like an eruption of sneeze-inducing pollen. My sinuses spasmed just looking at it. I don\u2019t even know where Costco found such brightly-colored yellow cornmeal. At first, I was certain it must have artificial dyes in it, but the ingredients don\u2019t list any. This corn meal is impressively fluorescent yellow, like a strip of crime scene tape. It\u2019s also <em>very<\/em> coarse, and dry, and extra-gritty. It falls off and scatters everywhere when the loaves are served. Cornbread is generally a low-cost, budget-friendly item, and this isn\u2019t a particularly large loaf. The current price of $7 simply isn\u2019t justifiable for what you\u2019re getting. There are perhaps 6-8 muffin-sized servings in this loaf. Soybean oil is the predominant source of fat, which is a disappointment. I like to keep mine in the pan, to preserve the moistness as long as possible.
